      Andolini's Perfect Pizza Dough

      2.5 lbs high gluten flour

      .3 oz yeast activated in 2 fl oz of 100 degree water

      Mix yeast water with .7 liters of 40 degree water

      Drop on flour in bowl

      Mix for a minute then add 1.2 oz sea salt. And add 1.2 oz of extra virgin olive oil. Then mix by hand or mixer for 15 minutes. If on mixer use low setting.
