Apple Cinnamon Cheesecake Pie

Crust:

2 Pillsbury Pet-Ritz Frozen Pie Crusts

Water, for brushing on pie crusts

1/2 teaspoon cinnamon

2 tablespoons sugar

Cheesecake Filling:

20 ounces cream cheese, softened

3/4 cup sugar

1/2 teaspoon vanilla

1 tablespoon cinnamon

3 eggs

Apple Topping:

3 medium apples, peeled and chopped

1/2 cup sugar

1/4 cup candied ginger, finely chopped

1/2 teaspoon cinnamon

2 tablespoons flour

2 tablespoons water

  • Preheat oven to 350 degrees F.
  • For Crust: Brush frozen pie crusts with water, sprinkle with cinnamon sugar mixture. Bake for 10 minutes. Remove from oven. Reduce oven temperature to 300 degrees F.
  • For Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth; add vanilla and cinnamon. Beat in eggs, one at a time. Pour into prepared crusts, bake for 1 hour, or until centers are firm. Cool completely; top with apple topping.
  • For Apple Topping: In a medium saucepan, heat apples, sugar, ginger, cinnamon, flour and 2 tablespoons water. Cook over medium heat until apples are soft. Cool completely; top cheesecake.

Yields: 2 pies.
