Bank Teller's Shrimp

1/2 c Quinoa cooked according to the package and chilled

5 large shrimp cleaned, de-vained and grilled with salt, pepper and olive oil

Fresh Carrots, cherry tomatoes, red bell peppers, green beans

1 c Fresh Spinach

Citrus Dressing

Toss Quinoa, veggies and spinach in citrus dressing. Top with grilled shrimp and enjoy.

Citrus dressing

4 lemons

4 limes

4 oranges

zest and juiced above fruit

1 onion

1 bunch parsley

chop in food processor and add fruit zest and juice

1 c white vinegar

salt and pepper to taste

Combine all ingredients in food processor and slowly add 1 c extra virgin olive oil until emulsified.
