Cold Cantaloupe-Thyme Soup

3 cantaloupes, peeled, seeded & chopped

2 c riesling

2 c water

1/2 c sugar

1 bu thyme

1/4-1/2 c fresh lime juice

2 T honey, if needed

pinch cayenne pepper

salt & pepper

thyme leaves for garnish

  • Combine riesling, water, sugar and thyme in a sauce pot, bring to a boil, remove from heat and chill

  • Once cold, strain into the bowl of a blender

  • Add melon and 1/4 c lime juice, puree until smooth

  • Season to taste with additional lime juice, cayenne, honey, salt & pepper

  • Adjust consistency with cold water, if needed

  • (Optional - strain through a sieve)

  • Chill in refrigerator until ready to serve

  • Garnish with a sprinkle of thyme leaves

Makes 2 1/2-3 qts
