1/2 cup fine dry bread crumbs
1/2 cup dried cranberries, snipped
1/4 cup finely diced onion
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground cloves
2 pounds ground Smart Chicken
1 14-oz. can jellied cranberry sauce
2 cups your favorite barbeque sauce, homemade or store-bought
Preheat oven to 350 degree F. Lightly coat baking sheets with cooking spray or line them with parchment paper. Set aside.
In a large bowl, beat egg with a fork. Stir in bread crumbs, dried cranberries, onion, salt, garlic powder and cloves. Add ground Smart Chicken and mix well. With a small-size cookie scoop, shape into approximately 60 meatballs. Place meatballs on sheets. Bake in preheated oven for 15-20 minutes, or until done.
Place barbeque sauce in a large Dutch oven or saucepot and heat on stovetop just until simmering. Stir in cranberry sauce. Add cooked meatballs, stirring to coat with sauce. Simmer on low heat until meatballs are heated throughout. Spoon meatballs and sauce into crockpot set on low-heat to keep meatballs warm. Serve immediately with toothpicks. Makes approximately 60 meatballs.
Note: To prepare ahead of time - prepare meatballs through the mixing step; however, do not bake. Cover and chill for up to 24 hours. Continue as directed using the maximum time to bake and heat in slow cooker.
