Dutch Oven Zucchini Bread

3 eggs

2 cups sugar

1 cup oil

2 cups grated zucchini

3 tsp vanilla

3 cups flour

1 tsp salt

1 tsp baking soda

3 tsp cinnamon

1/4 tsp baking powder

1/2 cup chopped nuts

  • Beat eggs, sugar, oil, zucchini, and vanilla. Mix in everything else. Bake 1 hour at 325 in pans or Dutch Oven approximately 2/3 full. If not done, reduce heat and bake slightly longer.
