Ginger Pineapple Upside Down Cake


  • 1 pineapple
  • 1 1/2 tbs fresh ginger
  • 1/2 cup butter
  • 1/2 brown sugar
  • 1/2 dark rum
  • 1 instant yellow cake mix
  • Slice pineapple

Layer on bottom of baking pan

Catch rum on fire to burn off alcohol

Add ginger butter and sugar whisk until smooth ( in saut pan).

Pour over pineapple slices

Prepare cake mix according to directions

Pour on top of pineapple mix

Bake according to box directions

Serve hot with cherry on top.
