Mary Anne's Baked Smart Chicken With Lemon and Oregano

This savory Smart Chickenentree will delight your family and you will love it because it'sso doggone easy to prepare! On those busy evenings when you don'thave much time preparing dinner, this dish will certainly do thetrick and win raves from your family. Serve with a green salad, yourfavorite veggie and some crusty toasted bread and voilayou'redone!1 package bone-in chicken thighs,about 3 pounds3 Tablespoons freshly squeezed lemonjuice, (I added about 5 tablespoons)1 teaspoon lemon zest2 Tablespoons honey1 Tablespoon extra-virgin olive oil3 garlic cloves, minced, more if youlove the flavor of garlic2 teaspoons fresh oreganoOr1 teaspoon dried oreganoSalt and freshly ground blackpepper, to tastePreheat oven to 375degrees F. Place the Smart Chicken in a greased 9x9-inch baking dish. In a small bowl, whisk the lemon juice, honey, oil, garlic, andoregano. Pour over Smart Chicken and season to taste with salt andpepper. Bake uncovered forapproximately 30 to 45 minutes, or until the internal temperaturereaches 165 degrees F. Be sure to baste occasionally with panjuices. Serves 4 to 6. Note: You can substituteany piece of Smart Chicken; my family loves the flavor and juicinessof the Smart Chicken thighs. Note: We served it overbuttered noodles, but rice would taste great, too. I spooned some ofthe pan juices over the Smart Chicken and the noodles.
