These cookies are so rich and delicious, you'll think you died and went to Chocolate Lover's Heaven. Adding the coffee and the chocolate liqueur deepens and heightens the flavor of the chocolate. I'm sure Forrest Gump meant to say, "Life is just a box of Chocolate Lover's Chocolate Chip Cookies"!
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon instant or espresso coffee
2 sticks butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon Godiva chocolate liqueur or vanilla extract
1/2 cup unsweetened cocoa, (I either use Hershey's or Ghirardelli's)
1 cup semi-sweet chocolate chips
1 cup white chocolate chips, milk chocolate chips or peanut butter chip1 cup chopped toasted pecans, walnuts or macadamia nuts (optional)
- Preheat oven to 375 degrees F. In a large bowl, stir together flour, cocoa, salt, baking soda and instant coffee or espresso. Set aside.
- Beat butter, granulated sugar, brown sugar, Godiva chocolate liqueur or vanilla in a large bowl on medium speed of mixer until rich and creamy. Add eggs one at a time and beat well after each egg.
- Gradually add flour mixture into butter mixture, beating well. Stir in chips and nuts, if using. Mix well.
- Using medium-size cookie scoop, drop dough onto parchment-lined baking sheets and bake 8 to 10 minutes. Don't over-cook them! Cool slightly; remove from cookie sheet to wire rack. Makes about 5 dozen cookies.
