Mary Anne's Grilled Smart Chicken Naan Flatbread

      Naan is a flatbread found in most grocery stores and is perfect for a quick meal, appetizer or snack. For a party appetizer, cut into wedges and serve.

      1 package boneless, skinless Smart Chicken thighs

      Garlic-flavored olive oil or regular olive oil, plus more for flatbread

      Salt and ground black pepper, plus more for flatbread

      3 packages Naan flatbread

      Italian seasoning

      1 small red onion, diced tiny

      1 package julienned-cut sun-dried tomatoes (without olive oil)

      6 slices bacon, cooked and crumbled

      Red pepper flakes, optional, to taste

      2 cups shredded Mozzarella cheese

      • Preheat oven to 400 degrees F. Place Smart Chicken on a parchment-lined baking sheet and with a pastry brush, brush each piece of Smart Chicken with olive oil, and then season with salt and pepper. Bake chicken until thoroughly cooked, about 40 minutes, and reaches an internal temperature of 165 degrees F. when a digital thermometer is inserted into each piece. Remove and slice into small chunks. Set aside.
      • With a pastry brush, brush each piece of flatbread with olive oil. Place on pizza stone or pizza pan. Add Smart Chicken and other desired toppings. If using, sprinkle with seasonings or fresh herbs. Add cheese and bake until cheese is hot and melted and flatbread is crisp, about 8 to 10 minutes. Cut into wedges and serve.
      Serves 6 to 8.

      Other Possible toppings:

      Wilted spinach

      Halved grape tomatoes (yellow or red)

      Pineapple chunks

      Canadian bacon

      Mini pepperoni slices

      Diced white or yellow onion

      Sliced olives, kalamata or black

      Fresh or dried herbs (like basil, thyme, or oregano)

      Sliced, not shredded, mozzarella cheese

      Crumbled goat cheese

      Grated Fontina


      Marinara sauce


      Note: You can add cheese right after brushing each flatbread with olive oil or last as given above.
