Mary Anne's Grilled Smart Chicken Thighs
Boneless,skinless Smart Chicken thighs are incredible pieces of meat to serveyour family, especially when grilled. Tender, moist and very tastyare words your family and guests will say after biting into just onepiece of Smart Chicken!1/4cup apple cider vinegar3Tablespoons whole grain mustard3cloves garlic, peeled and minced1lime, juiced1/2 lemon, juiced1/2 cup brown sugar1 1/2 teaspoons salt6Tablespoons extra-virgin olive oilDashfreshly ground black pepper1package boneless skinless Smart Chicken thighs (or other piece ofchicken)
- Ina large, non-reactive container, whisk together ingredients beginningwith the apple cider vinegar through the salt. Then whisk in oliveoil and pepper. Place Smart Chicken in the mixture. Cover andmarinate Smart Chicken in the fridge 8 hours or overnight. Note: Youcan place ingredients in the order given into your blender tothoroughly mix the marinade.
- RemoveSmart Chicken from marinade just before you turn on your grill orbroil to let the temperature of the chicken come up a few degrees. Be Sure toDiscardMarinade.Lightly oil your grill or broiler pan. Grill or broil approximately10 minutes, turning after five minutes. Smart Chicken is done when adigital thermometer inserted into chicken reads 160 degrees F.
