Mary Anne's Grilled Smart Chicken Thighs

Boneless,skinless Smart Chicken thighs are incredible pieces of meat to serveyour family, especially when grilled. Tender, moist and very tastyare words your family and guests will say after biting into just onepiece of Smart Chicken!

1/4cup apple cider vinegar

3Tablespoons whole grain mustard

3cloves garlic, peeled and minced

1lime, juiced

1/2 lemon, juiced

1/2 cup brown sugar

1 1/2 teaspoons salt

6Tablespoons extra-virgin olive oil

Dashfreshly ground black pepper

1package boneless skinless Smart Chicken thighs (or other piece ofchicken)

  • Ina large, non-reactive container, whisk together ingredients beginningwith the apple cider vinegar through the salt. Then whisk in oliveoil and pepper. Place Smart Chicken in the mixture. Cover andmarinate Smart Chicken in the fridge 8 hours or overnight. Note: Youcan place ingredients in the order given into your blender tothoroughly mix the marinade.
  • RemoveSmart Chicken from marinade just before you turn on your grill orbroil to let the temperature of the chicken come up a few degrees. Be Sure toDiscardMarinade.Lightly oil your grill or broiler pan. Grill or broil approximately10 minutes, turning after five minutes. Smart Chicken is done when adigital thermometer inserted into chicken reads 160 degrees F.
Serves4 to 6.

Note: Too hot to grill outside? Bake your Smart Chicken thighs in theoven at 350 degrees F. for about 25 minutes or until a digitalthermometer reads 160 degrees when inserted into chicken. Checkafter 20 minutes with your digital thermometer.

Note: Boneless, skinless pieces of Smart Chicken thighs can be a tastyappetizer by slicing each piece into bite-size chunks, and thenplacing the Smart Chicken on a plate with your favorite BBQ sauce ordipping sauce. They also make wonderful sandwiches, too!

Note:You can save time by placing marinade in a large Ziploc bag with theSmart Chicken pieces. Place bag into the freezer. When ready to use,defrost the Smart Chicken and proceed to grill, broil or bake.
