      Mary Anne's Holiday Squash Casserole

      Savory and delicious are two words that describe this over-the-top holiday casserole! It freezes easily and is perfect not just for the holidays, though, but for all those special family and friend gatherings throughout the year!

      2 medium yellow squash, peeled and diced, divided

      2 medium zucchini, peeled and diced

      1 medium onion, diced

      1 package Pepperidge Farm dressing mix

      8 ounces (1 stick) unsalted butter, melted

      1 carrot, grated or diced tiny

      1 green pepper, diced tiny

      1 can cream of chicken soup

      1 (8 ounces) carton sour cream

      1 (8 ounces) package Philadelphia cream cheese, cut into small pieces

      • Preheat oven to 350 degrees F. Simmer squash and onions until tender. In a large mixing bowl, mix melted butter with dressing, reserving 1/2 cup of dressing for top of casserole. Drain squash and onions and mix with remaining ingredients and put in a 9x13x2 baking dish. Sprinkle with reserved dressing mix. Bake at 350 degrees for 45 minutes, or until hot and bubbly.

      Serves 8 to 12.
