Mary Anne's Kentucky Butter Cake

For Independence Day (or any day for that matter), why not serve your family a Kentucky Butter Cake! You can serve it as is with a sprinkle of{} powdered sugar on top, slice it and serve with strawberries and whipped cream, or even drizzle hot chocolate sauce or caramel sauce over it.

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup butter, softened

2 cups sugar

4 medium eggs, room temperature

2 teaspoons vanilla extract or Kentucky bourbon

1 cup buttermilk or sour milk

1/2 cup toasted pecans

Butter Sauce:

1 cup sugar

1/4 cup water

1/2 cup butter

1 teaspoon pure vanilla extract or bourbon

  • Preheat oven to 350 degrees F. Grease and flour bundt or tube pan. You can also spray it with a non-vegetable cooking spray with flour. In a medium bowl mix together flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl cream the butter, gradually add sugar; continue creaming until light and fluffy. Add eggs one at a time beating well after each. Add remaining ingredients (except butter sauce). Beat two minutes at medium speed. Pour into prepared pan and bake for 60-65 minutes or until a toothpick inserted into cake comes out clean.
  • When cake is still very hot, leave in bundt pan, prick small holes in top. Drizzle butter sauce slowly over cake. Leave cake in pan until completely cool, and then remove.
Serves 8 to 10.

Butter Sauce:

  • In medium sauce pan on medium heat mix sugar, water and butter, bring to a simmer, stirring until sugar is dissolved, add flavoring, Proceed with the recipe above.
Note: For more adult versions, you could substitute for the vanilla extract Gran Marnier, Fra Angelico, Spiced Rum, Godiva Chocolate Liqueur, Bailey's Irish Cream, or even Cointreau. Rum extract or even lemon extract are great choices, too! When I have used the lemon extract, I have added one teaspoon of lemon zest to the batter!

Note: Buttermilk is so expensive I just add one tablespoon of lemon juice or white vinegar to milk and let it sit about 5 minutes.
