Mary Anne's 'Kickin' It Old School' Corn Salad

Some of the best food I have ever eaten has been "in the good ole summertime"!{} I love picnics, pool parties, or just eating dinner in the backyard! This recipe has been around for decades, but I like to serve it with chili cheese Fritos; it really kicks it up "old school"!{} Perfect for pot lucks, picnics, pool parties, church suppers, and Independence Day celebrations! 1 (12 ounce) bag frozen corn kernels, thawed


2 (15 ounce) cans corn, rinsed and drained thoroughly

1 (15 can) black beans, rinsed and drained thoroughly

2 cups grated cheddar cheese

1 bell pepper (any color), diced tiny

1/2 cup red onion, finely diced tiny

1 green onion, sliced

2 fresh jalapenos, deseeded and diced, optional

1 cup mayonnaise, regular or reduced fat

1 Tablespoon taco seasoning

Salt and pepper, to taste

1 (10 1/4 ounce) bag regular Fritos, BBQ or chili cheese, crushed, reserve 1/4 cup for topping

  • In a large bowl, combine thawed corn, black beans, cheese, bell pepper, onions, and, if using, jalapenos. Stir well. Add in mayonnaise, taco seasoning, salt and pepper. Refrigerate for at least two hours for flavors to become BFF's.
  • Just before serving, stir in crushed Fritos. The Fritos will stay nice and crunchy. Top with reserved crushed Fritos.
