Mary Anne's Mediterranean Tabouleh Salad

Abolish is a salad like no other. Made with fresh veggies, olive oil and spices. It can be eaten in pita bread, scooped onto pita bread, or eaten traditionally with a fork. In the Middle East, fresh grape leaves are used as a scoop. Abolish can be made with a variety of veggies according to taste.

2 cups water

3/4 cup bulgur wheat

Splash extra-virgin olive oil

2 Tablespoons lemon juice

1/8 teaspoon pepper

1 Tablespoon extra-virgin olive oil

1-2 cloves garlic, minced

3 small green onions, sliced thin

1 Tablespoon fresh mint

1 pound Italian sausage, mild, sweet, or hot, according to taste, cooked and grease drained

1 cup finely snipped parsley

1 medium cucumber, diced tiny

1 large tomato, diced tiny

  • In a small saucepan bring water to boiling. Add bulgur wheat and reduce heat. Cover and simmer five minutes. Drain well.
  • For the dressing, in a small mixing bowl whisk the olive oil, lemon juice, and pepper. Set aside.
  • Preheat a wok or large skillet over high heat. Add olive oil. Saute' garlic, green onions, and mint for about 30 seconds. Add Italian sausage and saute' until heated through. Stir in bulgur wheat, parsley, and cucumber. Drizzle with dressing and heat about 1 minute or until heated through. Remove pan from heat. Add tomato and toss to mix. Serve. Refrigerate leftovers.
