- In a small saucepan bring water to boiling. Add bulgur wheat and reduce heat. Cover and simmer five minutes. Drain well.
- For the dressing, in a small mixing bowl whisk the olive oil, lemon juice, and pepper. Set aside.
- Preheat a wok or large skillet over high heat. Add olive oil. Saute' garlic, green onions, and mint for about 30 seconds. Add Italian sausage and saute' until heated through. Stir in bulgur wheat, parsley, and cucumber. Drizzle with dressing and heat about 1 minute or until heated through. Remove pan from heat. Add tomato and toss to mix. Serve. Refrigerate leftovers.
