Mary Anne's Oklahoma Baked Beans
Summertime is grilling time here in Oklahoma. This baked bean is a perfect side for backyard picnics, pool parties or brought to church suppers or potlucks! Plus, it is so delicious it could be your entire meal! 1/2 pound bacon, cooked and crumbled, reserve drippings 3 Tablespoons bacon drippings 1 medium sweet onion, diced tiny 3-4 cloves garlic, minced 1 red, yellow, orange or green bell pepper, sliced tiny, optional 2 jalapenos, stems removed, de-seeded, sliced tiny, optional 1 (28-ounce) can baked beans 1 (16-ounce) can kidney beans, rinsed and drained 1 (16-ounce) can butter beans (lima beans), rinsed and drained 1 pound miniature sausages, sliced into thirds Or 1 pound ham, sliced into small chunks 1/2 cup brown sugar 1/4 cup catsup 1/4 cup apple cider vinegar 1/2 teaspoon dry mustard Dash Worcestershire sauce In a saucepan, saut onion, garlic, and, if using bell pepper and jalapenos in reserved drippings until tender, about five minutes. With a slotted spoon, transfer to a large bowl. Add remaining ingredients and stir well. Pour into one 9x13 baking dish. Bake, uncovered, at 350 degrees F. for approximately 45-55 minutes, or until hot and bubbly. Serves 8. Note: You can substitute ground beef or Italian sausage for the miniature sausage. Cook, drain, and rinse meat before adding to baked bean mixture.
