Super Bowl Sunday Chili
Your family will say you scored a touchdown when you serve them hearty bowls of chili at your super bowl party this Sunday. You can make it the day ahead and be ready to cheer on your team when your guests arrive! plus, it's fast, easy, healthy, and oh-so-delicious!
3 tablespoons extra-virgin olive oil
2 1/2 pounds ground turkey or ground beef
2 tablespoons chili powder, more to taste
2 tablespoons grill seasoning blend
1 tablespoon cumin
2-4 cloves garlic, minced
2 tablespoons Worcestershire sauce
1 tablespoon Louisiana hot sauce, more to taste
1 large onion, diced
2 large bell peppers, red and yellow, diced
1/2 to 1 bottle of beer
1 can black beans, drained
1 can kidney beans, drained
1 (14-ounce) can tomato sauce
1/2 cup smoky barbecue sauce
-In a saucepan add extra-virgin olive oil and brown turkey or ground beef on medium high heat. Add garlic, chili powder, grill seasoning, cumin, Worcestershire and hot sauce. Break up the meat into small crumbles. If using, ground beef, rinse off meat in a colander to get rid of fat.
-Add onions and chopped bell peppers to meat mixture and saute' 10 minutes more. Add beer and deglaze the pan, scraping up the drippings and cooking off the alcohol. Add beans, tomato sauce and barbecue sauce and bring to a bubble. Simmer chili 10 minutes. Adjust seasonings and heat level to your taste. Remove from heat and serve. Serves 8 to 10.
Note: you can saute' onions and bell peppers in separate pan and add to meat mixture.
Possible toppings: diced onions, corn chips, diced tomatoes, shredded cheddar cheese, sliced jalapeños, sour cream, cilantro, tortilla chips, cooked corn.
