Time For Tulsa Kids: Blueberry Crisp Recipe
FROM BETTY CASEYEDITOR, TULSA KIDS MAGAZINEwww.tulsakids.comBlueberries are plentiful right now and lots of people take their kids blueberry picking.Here's an easy recipe to make with all those blueberries:Blueberry Crisp1 quart (about 4 cups) fresh blueberries1/4 cup sugar1/4 cups light brown sugar1 TBL corn starch1 tsp. lemon juiceStir together sugars, corn starch and lemon juice then toss with berries until coated. Spoon into greased 8-inch square panTopping:1 cup all purpose flour3/4 cup oats3/4 cup light brown sugar1/2 cup butter, meltedCombine flour, oats and brown sugar. Stir in butter until mixtrue is crumbly. Spoon streusel mixture over berries. Bake at 350 40 minutes or until bubbling and brown on top.
