Touch of VenusFor the lavender crystals: 1/4 cup dried lavender 1/2 cup sugarFor the cocktail:juice of 1 lemon 1/4 cup lavender crystals1 teaspoon rose syrup2 ounces lemon juice2 ounces simple syrupice18 ounces soda water2 sprigs fresh lavender for garnish2 ounces vodka1. Make the lavender crystals by placing the lavender and sugar? in a food processor andprocessing until fully combined, about 1 minute. This can be prepared in advance andstored, in an airtight container at room temperature, up to 2 weeks.2. Prepare the drink by pouring the lemon juice onto a small plate and spreading the lavendercrystals on a second small plate. Dip the rim of a 12-ounce glass into the lemon juice, thendip it into the lavender crystals to lightly coat. Repeat with a second 12-ounce glass.3. Pour 1 teaspoon of the rose syrup and 1 ounce each of juice, vodka and simple syrupinto each prepared glass. Add ice and enough soda water to fill each glass. Garnish withlavender sprigs and serve.Makes 2 cocktails
