Stir fry is a quick and easy meal solution idea for your family. You can pick your favorite veggies. Be creativity!
1/2 cup vegetable stock
1/2 cup chopped zucchini
1/2 cup chopped squash
1/4 cup sliced mushrooms
3 stalks of asparagus (cut into bite size pieces)
1/4 cup chopped red onion
1/2 cup Yukon gold potatoes or sweet potato (chopped into bit size pieces)
1/2 cup chopped mixed bell peppers (it makes a beautiful presentation if you use red, orange and yellow, and gives a great flavor)
Salt and Pepper to taste
1/4 cup Black Bean (optional)
- In a skillet on medium heat, use 1/4 cup vegetable stock.
- Add potatoes, onion and peppers until slightly soft.
- Add the rest of the veggies and cook until done. If needed you can use the remaining vegetable stock then add salt and pepper to taste.
Don't be afraid to try some new vegetables or give it some spice with a Jalapeno. You can also add Black Beans for some protein and fiber.
