Vegetable Stir Fry

Stir fry is a quick and easy meal solution idea for your family. You can pick your favorite veggies. Be creativity!

1/2 cup vegetable stock

1/2 cup chopped zucchini

1/2 cup chopped squash

1/4 cup sliced mushrooms

3 stalks of asparagus (cut into bite size pieces)

1/4 cup chopped red onion

1/2 cup Yukon gold potatoes or sweet potato (chopped into bit size pieces)

1/2 cup chopped mixed bell peppers (it makes a beautiful presentation if you use red, orange and yellow, and gives a great flavor)

Salt and Pepper to taste

1/4 cup Black Bean (optional)

  • In a skillet on medium heat, use 1/4 cup vegetable stock.
  • Add potatoes, onion and peppers until slightly soft.
  • Add the rest of the veggies and cook until done. If needed you can use the remaining vegetable stock then add salt and pepper to taste.

Serves 2-4

Don't be afraid to try some new vegetables or give it some spice with a Jalapeno. You can also add Black Beans for some protein and fiber.
