What's Cooking: Bramble Breakfast & Bar - Monte Carlo Benedict

Chef Stephen Lindstrom from Bramble Breakfast & Bar shares the restaurant's mouthwatering take on a brunch favorite.

The Monte Carlo Benedict is a jazzed up twist on Eggs Benedict with an homage to the classic Monte Cristo sandwich.

Bramble Breakfast & Bar is a modern-rustic place serving up breakfast classics and beloved comfort foods with locally-sourced ingredients and staples like fresh-made breads and house-cured bacon.

They're located at 311 E. 2nd St. in Tulsa, and just opened a new location at the Riverwalk Crossing in Jenks.


Monte Batter:


1.5 lbs. all-purpose flour

1 Tbsp. baking powder

2 tsp. baking soda

2 tsp. salt

4 eggs

32 oz. buttermilk

Mix ingredients together. Dip brioche bread in batter and fry.


Hollandaise Sauce:

3 egg yolks

Zest from 1/2 an orange

2 tsp. orange juice

1 tsp. lemon juice

salt & pepper

8 oz. clarified butter

Mix yolks with juices, zest, salt & pepper. Using a double boiler, whisk the egg mixture gently over hot water that doesn't touch the bottom of the bowl. While whisking, slowly stream the clarified butter into the mixture until it reaches a thin custard-like consistency.

Assemble the dish with fried brioche on bottom, topped with ham, cheese and another slice of fried brioche. Fry 2 eggs over easy. Place on top of the sandwich. Pour Hollandaise Sauce over top.
