What's Cooking: Oktoberfest Potato Pancakes (Kartoffelpuffer)
Jan Heffner with the German American Society of Tulsa joins Tulsa Channel 8 News at 11 to prepare a traditional German favorite ahead of the city's annual Oktoberfest celebration.
Kartoffelpuffer - Potato Pancakes
3 lbs. large potatoes
4 Tbsp. flour
1 tsp. salt
oil or lard
Peel the potatoes and onions and grate immediately. Mix well with salt, eggs and flour. Heat oil in frying pan. When it's sizzling , spoon the dough into it. (About l serving spoon per pancake) Spread it out thinly and cook until golden brown on both sides. Serve directly from the pan onto a preheated plate.
Puffer are generally eaten with applesauce. Children in East Prussia sometimes sprinkle them lightly with sugar, then roll them up and enjoy.
