Shepherd's Pie

Filling:

2lb Lean Ground Beef

1 Clove Garlic

1 Large Onion (diced)

5 Carrots (diced)

2T AP Flour

500ml Beef Stock

1T Tomato Puree

1T Fresh Thyme


Topping:

2lb Potatoes

5 Carrots

Butter

Milk


Recipe:

*cook 2lb lean ground beef until brown

*add 1 clove garlic, 1 large onion (diced), 5 carrots (diced) and cook for 4 mins

*stir in 1 tablespoon AP flour and stir, cook for 1 min

*add 500ml beef stock/broth (this is about half a box), stirring add 1 tablespoon worcestershire sauce, 1 tablespoon tomato puree and season with salt and pepper and thyme. Bring to a boil and then simmer for 10-15 mins

*meanwhile cook the carrots (5 medium) and potatoes (2lbs about 5 medium), (put carrots in first then after 4mins add potatoes). Boil until cooked. Drain, mash and stir in some milk (of course we love our fresh raw goats milk!) add salt and pepper.

*spoon meat mixture into a oven proof dish and top with the carrot/potato mash.

*broil for 5 mins until top is brown

* we enjoy serving it with green onions and Farm Sweet Farms goat cheese!
