They're located at 311 E. 2nd St. in Tulsa, and just opened a new location at the Riverwalk Crossing in Jenks.
1.5 lbs. all-purpose flour
1 Tbsp. baking powder
2 tsp. baking soda
2 tsp. salt
32 oz. buttermilk
Mix ingredients together. Dip brioche bread in batter and fry.
3 egg yolks
Zest from 1/2 an orange
2 tsp. orange juice
1 tsp. lemon juice
salt & pepper
8 oz. clarified butter
Mix yolks with juices, zest, salt & pepper. Using a double boiler, whisk the egg mixture gently over hot water that doesn't touch the bottom of the bowl. While whisking, slowly stream the clarified butter into the mixture until it reaches a thin custard-like consistency.
Assemble the dish with fried brioche on bottom, topped with ham, cheese and another slice of fried brioche. Fry 2 eggs over easy. Place on top of the sandwich. Pour Hollandaise Sauce over top.
