    Chef Felix Adame demonstrates how to make In The Raw's popular Twister Roll


    *sushi rice - 3oz per roll

    *seaweed rolling paper

    *masago (fish roe)

    *cucumber, julienned

    *jalapeno, julienned

    *fresh Yellowtail

    *fresh tuna

    *cream cheese

    *fresh halibut

    *avocado/cilantro sauce

    *seaweed salad



    Spread sushi rice evenly over the seaweed rolling paper.

    Spread masago over the rice.

    Flip to the opposite side of the rolling paper then add cream cheese, jalapeno, cucumber, tuna and yellowtail.

    Tuck all ingredients inside roll.

    Top roll with halibut, avocado/cilantro sauce, seaweed salad, sriracha sauce.

    Plate and enjoy!


    A makisu (rolling mat) can be ordered online or found at many grocery stores.

    Wrap the makisu (rolling mat) with plastic wrap, it keeps rice from sticking while trying to roll sushi.

    When doing a sushi party, prep most ingredients a day ahead. Many ingredients require a lot of time to prepare.

    When making sushi rice, use a 1:1 ratio. 1 cup of water per 1 cup of rice. Make sure to rinse the rice 3 times before cooking.
