What's Cooking: Lassalle's New Orleans Deli - Jambalaya
Chris West, owner of Lassalle's New Orleans Deli in downtown Tulsa prepares a tasty pot of Jambalaya.
2.5 pounds sausage
2 cups diced onion
2 cups diced bell pepper
2 cups diced celery
1 pound chicken, cooked & shredded
12 oz. can diced tomatoes, drained
1/2 cup hot sauce
1/2 cup Worcestershire sauce
2.5 tablespoons granulated garlic
2.5 tablespoons creole seasoning
1 heaping quart parboiled rice
1 level quart water
Brown sausage in large pot.
Add onions & cook until it begins to soften.
Add bell pepper & celery & cook until it begins to soften.
Add chicken & stir to combine.
Add diced tomatoes & stir to combine.
Add hot sauce & Worcestershire & combine thoroughly.
Add granulated garlic & creole seasoning & combine thoroughly.
Add rice & water, stir & allow to simmer for 5 minutes uncovered.
Cover with a tight-fitting lid & simmer on low for 30 minutes.
Turn off heat & keep covered for 30 more minutes.
Uncover, mix thoroughly & enjoy!
